Nordic from end to end
Denmark and Sweden share the basket between them. The beers are brewed organically at Kølster, the bread crisps, cheese crumbles and preserve are Swedish, and both kinds of wine gum are handmade in Denmark.
It is put together as a small spread rather than seven separate things. The fig and olive preserve goes on the bread crisps, where the caramelised sweetness meets the salt, and the cheese crumbles are eaten as they are. Then there are two kinds of wine gum - one with liquorice and white chocolate, the other fresh with lime and lemon.
The two beers are chosen to pull in different directions. Himmelfryd is a clean, well-hopped pilsner that handles the savoury side, while Yuzu is a Berliner Weisse soured with lactic acid bacteria and given a good dose of citrus. Its tartness plays against the lime wine gums and means there is a real choice rather than two of the same.
